On the inside: spicy tuna mixture, tempura-fried shrimp, and pieces of papaya. On the outside: spicy Alaskan king crab laced with a bit of barbecue sauce, all resting atop a pool of nuta sauce. No wonder our waiter was nearly out of breath when he finished describing the roll.

And we were nearly breathless as we tasted it. This is a sushi creation to savor, contemplate and later reflect upon. The flavors and textures come in waves: first, the tart nuta sauce; then the salty, spicy tuna; then the fresh, exotic papaya; then the satisfying crunch of the tempura; followed by the silky strands of real crabmeat.

When the massive ten-piece roll arrived at the table, our waiter cautioned us against using soy and wasabi to enhance its flavor; simply because it didn't need it. He was right--the sweet and spicy innovation was perfect on its own.
