Japanese cuisine is more than just sushi. There's delightfully grilled yaki tori, beguiling miso soup, the quick-draw knife work of the hibachi chef, the delicately fried tempura and the exotic wonders of the sake menu. The folks at Ginza in Bloomfield have got all the traditional bases covered, but they also keep branching out. "Executive chef and owner John Chen and the other chefs are constantly evolving the menu," says general manager Alex DePratti. The chefs recently launched an Italian roll (fresh mozzarella on the inside and prosciutto on the outside). "And we have a Chilean sea bass that will knock you off your feet," says DePratti. And Japanese food has finally entered the realm of standard fare for many American diners. "It's a fact," says DePratti. "On the West Coast sushi is like hamburger. Sushi is now a household name. If you haven't tried it, you're not really in style."
