Service at a restaurant is about more than simply getting your food delivered in a timely and courteous manner. Great servers master the art of tending to customers' every desire without making the diner feel suffocated or over-watched. And the kitchen has to be in top form, swiftly sending out beautiful plates, even when the place is packed. Over time, the staff at Ginza has developed a real bond with the regular customers, says general manager Alex DePratti. "It's a very intimate relationship," he says. Customers "feel like they're part of something," says DePratti. It's the mix of reliability and subtle change — Ginza introduces at least one page of new specials each week — that keeps long-time regulars pleased. The chefs at the hibachi expertly wield a squirt of flaming oil, a flick of a sliced squash, or a flip of a knife. Beyond just being efficient and friendly, the service is downright entertaining.
